How are cocktails counted?

A cocktail follows its recipe: every spirit and mixer in it is consumed from stock in millilitres when it is sold.

Can a rooftop bar and a restaurant bar run separately?

Yes. Each bar is its own store and station with its own shifts, while menus and reports cover both.
